Direct sales of reindeer meat to consumers are permitted within the reindeer husbandry area without separate meat inspection; the activity is registered with the municipal food control authority. Fresh meat, cut joints and traditional dried meat are sold directly by the producer and may be delivered to an address within the reindeer husbandry area. Ground meat, smoked and other processed products are made from inspected meat in an approved facility. Only verified herders and processors sell on Willit, and all products are traceable to the reindeer farm.

Why is reindeer meat more expensive than regular meat? ▼
Reindeer roam free in arctic nature and don't suit factory farming. Herding is handwork and roundups happen once a year. The price reflects quality, purity and traditional production. Buying direct from producers gives you good value.
When is reindeer meat best available? ▼
Reindeer roundups happen in autumn (September-November), when fresh reindeer meat is most available. Frozen and processed reindeer meat (dried, cold-smoked) is available year-round.
How should reindeer meat be stored? ▼
Fresh reindeer meat keeps 3-5 days in the refrigerator. Frozen reindeer meat keeps up to 12 months at -18°C. Always thaw in the refrigerator, not at room temperature. Dried meat keeps for months at room temperature.
How do I make sautéed reindeer? ▼
Classic sautéed reindeer: Thaw the meat and fry in butter on high heat until browned. Add a pinch of salt and a splash of water. Simmer on low heat 15-30 min. Serve with lingonberry jam and mashed potatoes. Roast cuts need shorter simmering.
What permits does selling reindeer meat require? ▼
Direct sales of uninspected reindeer meat to consumers are permitted within the reindeer husbandry area — Finland has a national exception from EU law for this. The sale is registered with the municipal food control authority and the seller maintains own-checks. A reindeer owner may sell up to 5,000 kg of uninspected reindeer meat and 500 kg of dried meat made from it per year. Meat may be sold as a carcass or cut, fresh or frozen, and as traditional dried meat; grinding, smoking and other processing fall outside the exception. Sales are also possible via REKO food rings, door-to-door or by post, as long as the meat is delivered to an address within the reindeer husbandry area. Only verified producers sell on Willit.
