What the kitchen should know — mushrooms

Mushrooms come either fresh at short notice or frozen. Some species need blanching before use, and the batch states whether the producer has already done it. Fresh mushrooms do not keep in a sealed pack, so they arrive in an airy crate and are used within one to two days.

Use and storage

Fresh: store at +2…+4 °C and use within a few days of delivery. The batch carries the harvest or catch date the shelf life is counted from.

Traceability

Every batch carries its producer, its harvest or catch location and a date. The same details appear on your invoice lines and on the batch label, so a claim on your menu holds up when it is checked.
