About this product

Vendace is a small but extremely flavorful lake fish that is the heart of Finnish fishing traditions. This silvery relative of herring lives in large lakes and is often eaten whole, including the bones. Fried vendace is a favorite summer delicacy at markets and restaurants.

Harvesting and availability

Vendace is caught with seines or nets from June to September. In winter, caught by ice fishing. Best locations are large, deep lakes like Kallavesi and Päijänne.

Fresh vendace keeps in the refrigerator for only a day, so handle quickly. Frozen, it keeps for 2-3 months. Smoked, it keeps for a few days.
