Harvesting and availability
Matsutake grows in Finland September-October in dry heath forests near pines. The mushroom is partially underground, so look for raised bumps in the ground. Leave young specimens to mature.
Storage and handling
Fresh matsutake keeps in the refrigerator for 3-5 days. Do not wash with water. Freezing diminishes aroma. Dried keeps, but fresh is best.
