Chanterelle is a golden forest mushroom prized for its fruity aroma and firm bite. It thrives in spruce and mixed forests with lush moss beds, fruiting from July into late autumn. Chanterelles require no parboiling and travel well from forest to kitchen.

Harvesting and availability
Chanterelles flush after summer rains from July through September. Cut the mushroom at the base with a knife and brush off debris in the forest. Avoid picking tiny buttons and leave small clusters to expand.

Fresh chanterelles keep in the refrigerator 3-5 days in a paper bag. For short-term prep, dry-saute to release moisture and chill. Dried or frozen after light sauteing they store for up to a year.
